Salmon & Beetroot Salad
This is a pink salad and the beetroot makes the salmon even pinker! It gets all the brain boosting spots too which gets it high in my recipe book.
Time : 15 minutes
This salad kicks your insomnia out the window with 255%* vitamin B-12 and 140% vitamin D plus 35% magnesium, 30% B-6 and 15% vitamin E all fight those horrid awake nights. 2 x free range or organic eggs
50 g x beetroot, sliced
50 g x olives (no stone), sliced
50 g x lettuce, roughly sliced
50 g x smoked salmon, sliced
15 g x sunflower seeds
1 tbsp x olive oil
1 tsp x balsamic vinegar
- Boil eggs for 7-10 minutes. Then drain & run crack shells, run cold water over them. Once cold enough peel the shells off & slice the eggs.
- While the eggs are boiling, mix the remaining ingredients into a bowl with the olive oil & balsamic vinegar.
